VINEYARD
A twelve year old vineyard standing on a loamy soil with an east/west row direction and perfect exposure for ripening.
CLIMATE
Enough cold during the preseason ensured even budding. Moderate conditions prevailed during most of the harvest, with the exception a heat wave during the last week of January. Overall, very good conditions for ripening and harvesting.
HARVEST
Machine harvested from 2am to 9am into 4 ton bins, after we did grape selection in the vineyard.
WINEMAKING
Grapes harvested at 21 B, destemmed , crushed and only very clear juice are fermented with Vin 7 yeast in steel tanks at 13 C. After fermentation the wine was immediately racked of the lees, stabilized and bottled.
ANALYSIS
Alcohol 12,5 vol % Sugar 6,10 g/l pH 3,39 Acidity 6,84 g/l V/A 0,42
TASTING NOTES
A crisp, fruity white wine with hints of guava and passion fruit on the nose. This wine displays mouthwatering fruit on the palate and crisp, well balanced acidity. Ideal with seafood or to sip on its own.

Absolutely delicious wine! I dont usually drink white wine but really enjoyed this wine. Great for warm summer days and thoroughly enjoyed drinking it paired with my seafood salad.

I’m not usually much of a white wine drinker.. but this grape variety really blew me away! Natalie explained that it was an unusual and rare wine to taste after I mentioned I’d never seen a ‘Colombar’ before.. so I had to try it and I’m so glad I did! Will definitely be buying more of this soon!
