VINEYARD
An 18 year old Shiraz vineyard on a slight southern slope on very high potential red Karoo soil with layers of clay and lime. Rootstock Richter 110, clone SH 1A.
CLIMATE
A warm and dry season, with high temperatures in January. The grapes achieved ripeness quite easily with slightly higher alcohol levels and lower acidities. Overall, the dry weather ensured healthy grapes and wines with pronounced fruit and easy drinkability.
HARVEST
Machine harvested from 2am to 11am into 4ton bins, after we did grape selection in the vineyard. Production of 10 000 liter per hectare.
WINEMAKING
Grapes were harvested at 21 balling sugar. Skin contact was given in the drainers for 4 hours to extract colour before only the freerun juice was drained of the skins and settled before fermentation. Two tanks were inoculated; one with Vin 13 and the other with CKS102 yeast. The wine was fermented at 13 deg. Celcius. After ferment the wine was racked, blended, filtered and bottled.

Alcohol 12,5 vol % Sugar 5,2 g/l pH 3,35 Acidity 5,8 g/l V/A 0,24
TASTING NOTES
Vibrant, salmon coloured wine with prominent red berry flavours on the nose. A velvet palate showing subtle hints of cherries, ending with a lingering finish. Beautiful balance between the fruit and acidity on the taste. Dry and elegant. Ideal with salads and seafood.
