Palate: Generous mouthfeel, smooth tannins, delicate persistence

Altitude: 210-289m
Soil: Sandy loan on clay; weathered sandstone with high organic content
Yield: 6.5 tons per hectare (45hl/ha)
VINIFICATION
Maceration: 3-4 days cold maceration before fermentation; 1-4 weeks extended maceration after fermentation; ±3 punch-downs per day
Fermentation temp: 24-26°C
Malolactic fermentation: In foudre
MATURATION
Shiraz and Viognier fermented together; last part of fermentation completed in foudre; Mourvedre and Grenache integrated into blend after fermentation; further 24 months maturation in French oak foudre
In bottle pre-release: 6-9 months
Ageing potential: 6-8 years and longer
