VITICULTURE
The vineyard is situated at the foot of the majestic Langeberg Mountains resides Le Roux & Fourie Vignerons on Buitenstekloof farm. If you’re looking for distinctiveness, look at the smallish, almost round circles of brighter green vegetation on the slopes where the soil composition sustains a species you will find nowhere else in the world. This is totally unique terroir. There is one such species that is only found on the farm, duly noted by Prof. van Jaarsveld, Cape Town Botanical Gardens (for purposes of plant poaching, the name is left out). It is a combination of perseverance, passion and terroir that compels the Fourie brothers to craft extraordinarily unique wines.
WINE MAKING
Barrel aging takes place for 24 months in a selection of French oak barrels. Fermentation takes place for 14 days at 23⁰C. Yeast used – Zymaflore. Malolactic fermentation takes place 100% in barrel.
WINE ANALYSIS
Residual Sugar: 2.7 g/l; pH: 3.60; Alcohol: 14.0%; Total Acid: 6.0 g/l; Free SO2: 8 mg/l
TASTING NOTE
This is one of only 2 100% pure Carignan produced in the whole of South Africa and with only 1800 bottles a year you are drinking a part of history. The sweet floral raspberry and strawberry flavours of the bouquet, creates harmony with the smoked plum and spice of the wine, standing up to the best of heavy dishes when pairing it with food.
FOOD PAIRING
Beef fillet with black pepper, braised pork belly with peppercorn sauce, cabbage soup with crispy bacon, duck breast with cherry sauce, lamb chops on the fire or game biltong.
